 Put the Olive Oil in the Pressure Cooker or in a big pan. When the oil is warm add the onio finaly chopped and cook very slowly for 3 minutes till start to become brown.
 Add the meat. Remember that there is a lot of meat so the pan has to be big or you'll not be able to cook properly.
 Cook all side of the meat at high heat turning the meat very often with a big wooden spoon. Add Salt and Pepper. When the meat is all brown like in the picture add 1 glass of dry white wine and let evaporate at high heat, it will take 3 minutes.
 When the wine is evaporate add the chopped tomatoes cans. I usually use to blend in a food processor or using an handler blender the tomatoes to make it very creamy before cooking, but it is optional  . Mix well with the wooden spoon and add 2 beef cubes to salt the sauce and the meat.
 Close the Pressure Cooker. With my Presto Pressure Cooker I cooked for 30 minutes at medium heat after the central lid started rolling. Please refer to your Pressure Cooker Instruction on how long you need to cook Pork Ribs or similar. In case you don't have the Pressure Cooker you need to cook the meat and sauce at low heat for 3 hours (unfortunately! now you know why I'm using the Pressure Cooker).
 After 30 minutes of cooking close the heat and open the pressure cooker following your instruction. as you can see the meat around the ribs is almost falling a part. That means the meat is tender and done! Add Salt and Pepper to adjust the final taste.
 Now it is time to cook the polenta. In my case using the Polenta Valsugana Quick an Easy I had to bring some water to boil and then cook the polenta for 5 minutes. In your case please follow the instruction on your package.
 This is where usually polenta is served. It is called Scifella and it is a wood serving dish. Why this? Because the wood will adsorb all the etra liquid coming from the polenta and keep the polenta crisp and not mushy. In case you don't have it any type of serving dish will be fine (you can use the wooden cutting board if you have it and it is big enough to handle the polenta).
 Put the polenta in the centre.
 Spread the polenta evenly on the serving dish.
 Add the Ribs and the sauce.
 Cover the sauce with fresh Parmisan.
 Ready to enjoy this wonderful dish.
